Iru or Dawadawa, also referred to as Locust Beans, is an indigenous Nigerian flavoring utilized in soup recipes. This condiment can be applied to prepare various types of soups such as Okro, Ewedu, Vegetable, and Ogbono soups. To reduce the fermented odor,and to increase the shelf life, the Iru has been sun–dried, and it can be preserved by keeping it in a cool and dry spot.
